Nothing against romaine lettuce, but I have always been a fan of arugula salad. The weather in New Jersey has been nothing shy of sweltering these past few days, and a crisp salad is perfect for those times when it’s just too hot to turn on the oven—or put in a lot of effort to cook a large meal. Tangy blue cheese and sweet apples make this tasty arugula salad hard to resist. I paired it with a sweet honey vinaigrette for even more flavor.
Ingredients (one serving)
1 ½ c packed arugula
¼ c red onion, chopped
2 tbsp. blue cheese crumbles
½ medium tomato, chopped
5 apple slices
1 tbsp. extra virgin olive oil
1 tbsp. balsamic vinegar
1-2 tsp. honey
Mix arugula, onion, blue cheese and tomatoes. Top with apple slices. In a small bowl, mix olive oil, vinegar and honey. Pour over salad and serve.
My wife likes arugula with parmesan cheeze, sliced tomatoes, oil and lemon. We will try your apple/blue cheeze version this week.
