It was a sticky 85 degrees here in New Jersey today, so I knew I wouldn’t want something hearty and warm for dinner. My mom got this recipe from a friend a long time ago and makes it for almost every big get together the family has. It takes hardly any time to make and features ingredients that you probably already have on hand. Plus, it’s healthy. And while the dressing does contain sugar and mayonnaise, when spread out over the whole salad, it doesn’t amount to too much.
1/2 cup mayonnaise
3 tablespoons white sugar
1 1/2 tablespoons apple cider vinegar
1 head of broccoli
1/2 cup shredded cheddar
1/4 of a large red onion
4 slices bacon
In a small bowl, whisk dressing ingredients and set aside. Then, rinse broccoli head and cut off the stem. Pull apart broccoli into small florets. In a large bowl, combine broccoli, cheese, red onion, and bacon. Pour dressing over salad and let sit for an hour, then serve.
