I’ll start with this: I love pizza. When I have a pizza craving, I satisfy it. Last night’s menu was fresh spinach and artichoke pizza on whole wheat dough (I’ve been on a health kick lately). I can’t stress enough that the flavor of whole wheat dough is astoundingly similar to regular dough, making it a great alternative to the starchy, carb-filled white dough we know and love. The garlic and olive oil base adds flavor without weighing down the pie, so it’s easy to pile this pizza with tons of fresh chopped spinach and artichokes.
Finishing the pie with feta and fresh-squeezed lemon juice creates a perfect pairing of flavors to top off this mouthwatering meal. The best part? It’s simple to prepare, simple to enjoy, and leaves no room for feeling guilty about a delicious dinner. This is a basic spinach and artichoke recipe using store-bought dough. I often use store-bought dough to save time, but a quick browse through Pinterest will provide you with a homemade dough recipe, should you opt for that route.
Ingredients:
1 package store-bought dough (try whole wheat to keep it a bit healthier!)
2 c raw spinach, chopped
3 artichoke hearts in brine (not marinated)
2 c shredded mozzarella cheese (I used part-skim)
¼ c feta cheese
1 garlic clove, finely chopped
2 tbsp olive oil
½ tbsp fresh squeezed lemon juice (optional)
Preheat oven to 450. Spread dough out on a pizza pan. Place chopped garlic in a small bowl with olive oil. Mix and spread evenly on dough. Top with shredded mozzarella, then spinach and artichokes. Finally, add feta topping and lemon juice. Bake in oven for 15-18 minutes or until crust is to desired crispiness.
