Making a full dinner in a short amount of time is no easy task. But chicken is so versatile that it can be made in pretty much any way imaginable—and quickly, too. If I’m being honest, I didn’t have a ton of time to come up with a new recipe this week, so I was looking for something that didn’t require much effort but could be ready within the hour—and this dinner is it. Some chicken breasts and a few ingredients you most likely have in your home are all you need for this effortless dinner.
Ingredients:
3-4 boneless chicken breasts
Olive oil
1/3 cup white wine
4 tablespoons butter
2 garlic cloves
Salt & pepper
Directions:
Preheat oven to 350. Place chicken breasts in an oven-safe dish with a bit of olive oil. Season chicken with salt, pepper, and any other seasonings you prefer — I added some dried oregano, crushed red pepper, and a bit of Parmesan. Bake 45-55 minutes or until chicken reaches an internal temperature of 165 Fahrenheit. With about 20 minutes remaining in cook time, remove chicken and add butter, wine, and garlic to dish. (I added two sprigs of rosemary because I love it, but that’s totally optional.) Cook chicken for its last 20 minutes. Serve on its own or with a pasta of your choice.
