I was born to love everything Italian; from eggplant parm to any type of pasta you could possibly think of, there is nothing like the flavor of a delicious Italian meal. These bite-sized apps imitate a classic antipasto: hot peppers, artichoke hearts, provolone and more, all stuffed inside a crispy genoa salami cup. With a super easy stuffing and a quick cook time, these little Italian bites will have everyone at your party taking more than just one.
Ingredients:
3 artichoke hearts
1/2-1 whole hot cherry pepper, chopped (depending on the level of spicy you’re craving)
3 sundried tomatoes, chopped
2 oz. shredded provolone
1/2 tbsp. Italian-style breadcrumbs
1 small garlic glove, minced
15 pieces of genoa salami (small enough to fit in a mini muffin tin)
Preheat oven to 400. Combine first six ingredients in a bowl. Then, spray a mini muffin tin with cooking spray and place salami in muffin holes. Place a spoonful of the mixture in each of the salami cups. Bake for 15 minutes. Makes 15 salami bites.
